Simplenote is good, are there any other note taking apps that you would recommend?

Some good alternatives I can recommend are Standard Notes icon Standard Notes, Joplin icon Joplin (both end-to-end encrypted and open-source) and Bear icon Bear. But it depends on what OS you're using and if you're looking for sync capabilities.
