OpenBoard is a great alternative (best one in my opinion). It's more polished and have more functionality (emoticons, clipboard shortcuts and more). It doesn't have the bugs and unpolished feeling that I experienced with Simple Keyboard.

Bottom line, OpenBoard has more functionality and feels more polished.

Gboard is proprietary and filled with trackers and whatnot. You can't really feel safe about its privacy or security either because it's not open source. If Simple Keyboard isn't doing it for you, try OpenBoard before Gboard. I recommend staying away from proprietary virtual keyboards as security and privacy analyses have shown they aren't your friend.
