The accuracy of the transcription from speech to text depends on the language model you choose. I received good results with Whisper Large-v3. The speed is acceptable.
Works offline, which is important to me, as I don’t want my stuff stored on a third-party server.

What is Speech Note?
Note taking and reading with Speech to Text and Text to Speech
Speech Note enables you to take and read notes with your voice. It uses Speech to Text and Text to Speech conversions to do so. All voice processing is entirely done off-line, locally on your computer, without the use of a network connection. Your privacy is always respected. No data is sent to the Internet.
Available for both Linux desktop and Sailfish OS app
Speech Note uses many different free processing engines to do its job
Language models can be downloaded directly from the app.
Text to speech can be exported to file in WAV format
