Consent-o-Matic doesn't work in many cases unfortunately, and while it's supposed to be "educational" and show you how many windows and/or time you would have spent closing them, this specific feature is critically underdevelopped to the point it doesn't serve its purpose right. You're better off going with other cookie managers like I Still Don't Care About Cookies.
Consent-O-Matic can't be replaced with uBlock Origin because it actually fills out forms automatically instead of just hiding forms visually or blocking network requests.
Consent-O-Matic won't break websites if users allow to send some data.
