Textastic is a text editor for iPhone, iPad and Mac with rich support for syntax highlighting, FTP, SFTP and Dropbox.

Been using it for years on the iPad. It makes it possible for me to modify web sites quickly without the need for a full blown workstation. It has a really useful programmers keyboard - which is responsive to whether I have a keyboard plugged into my iPad. It also has an easy to use file transfer function that allows you to download, edit and preview your changes locally before uploading them.
