The Palo Alto Networks Applipedia is a great tool if you use PAN firewalls. If you don't then I guess it might still be a useful reference but I've never used it.

The Cisco equivalent, which is what I came here looking for, seems to be a Firepower Application Detector Reference which you can find on the the FMC Technical Reference page. The Cisco version has much less info.

Applipedia provides information about the nature of each application (e.g., Skype, Twitter, BitTorrent, Sharepoint), including a risk rating, benefits, and specific behaviors exhibited by the application. This enables organizations to make intelligent policy decisions, and then enforce them with next-generation firewalls from Palo Alto Networks – controlling applications regardless of port, protocol, or evasive tactics.
