Can remove metadata from PDF files, compress them, is open source and has next to no tracking (only usage report iirc)
Used it for years, unfortunately it's been progressively enshittified, culminating in what's now the only way to interact with it, through ChatGPT.
Note that this does have a standard Windows Desktop installation too.. available at GitHub.
