It's much more realistic, detailed, and hence more effort is required to play. Also, by default it has much harder survival mechanics, like food preservation and temperature.

Everyone likes Minetest but it is not compatible with Minecraft. I recently googled Minecraft web client and found mcraft fun which is also open source, worked insanely well in my case, and I wish there were more projects like this. Like compatible with Minecraft in any way: make some migrations tools or anything, please! But still a very interesting project with a large community though!

If you just want a better minecraft, this is probably the closest you can get. However, if you're looking for a game that actually fixes the underlying design, you may want to keep scrolling.
