HTTP Toolkit is a beautifully simple (yet sleek and powerful) tool for HTTP(S) request inspection and manipulation.

Included are a variety of quick-start "connectors" to help setup this tool for many different scenarios (or you can just use it as a standard proxy and configure your traffic source manually).

People looking to use this tool for reverse engineering will be happy to hear that there is also built-in support for ADB and Frida, allowing you to capture HTTP(S) requests on Android and iOS devices too (and in the case of Frida, on both platforms, the tool will also disable most certificate pinning measures, which is very useful for capturing HTTPS traffic!)

You'll also see when requests fail to go through completely (say for example, if a client rejects/aborts the connection because it doesn't like the certificate or gets disconnected for whatever reason) which is a nice bonus that some other tools I've tried don't tell you about.

Finally, I'll also mention that as a university student, I emailed and got a free year trial of Pro just for asking, despite the website saying there are no trials. If you're intending to use this tool during your studies, it's still worthwhile emailing them!
