Iroh 1.0 launches with stable key-based addressing and broad language support

Iroh 1.0 is now available, offering a stable, key-based addressing model that allows devices to connect using cryptographic keys instead of IP addresses.

This release also introduces official support for Python, Node.js, Kotlin, and Swift, expanding developer integration options.
